Beetroot and Halloumi Burgers

Who doesn't love a good burger? This one is for all the vego's out there

65g cooked beetroot
60g halloumi cheese * see note
1 x 400g can butter beans, drained and rinsed
1 spring onion, trimmed and finely chopped
1/2 level tsp mixed dried herbs
15g fresh breadcrumbs
1 free-range egg, lightly beaten
Freshly ground black pepper
1 tbsp sunflower oil

Meanwhile, coarsely grate the beetroot and halloumi and set aside on a piece of kitchen towel
Roughly mash the butter beans, then add the beetroot, halloumi, spring onion, herbs, breadcrumbs and egg. Season with black pepper and shape into 2 burgers
Heat the oil in a frying pan and cook the burgers over a medium heat for about 3 mins on each side, until golden brown
Mix the salad with the honey and mustard dressing.
Serve with the burgers
