HARD - Queso Mahon Curado, Merco. | Spain
Whether it’s the traditional recipe or the high-quality milk from the ancient breeds, the Queso Mahón Curado delivers an incredible punch of flavour. Even after its six months of ripening, the cheese retains its lovely creamy and milky characteristics with buttery sharp and slightly salty undertones. These flavours are punctuated by nutty thrusts of aromatic flavour. And each brittle shard of cheese ends with a characteristic tang on the tongue. Delicious and highly memorable.
SOFT - Black Cow, Nimbin Valley Dairy | Australia
With milk sourced from free range Fresian and Jersey cows, collected in the morning to ensure ultimate freshness, Black Cow is a complex blend with buttery and lemon flavour notes. At two days of age, the cheese is cut, rolled in vine leaf ash and set on racks to mature. When the cheese is young the paste has a chalky texture that gets creamy and soft as it gets older. When Black Cow is fully mature it has a soft, buttery consistency with a more intense and caramel flavour.
STINKY - Tin Tin, Kris Lloyd Artisan | Australia
Tin Tin has been called an ‘entry level’ washed rind. But don’t think that means that you’ll be searching for flavour. When you cut into this unassuming bloomy rind, you’ll be enthralled by the milky, delicate sweetness that offers up a backing hint of beautiful funk. Look for hints of apple cider and some herbaceous base notes.
BLUE - La Peral Blue Cheese, La Peral | Spain
La Peral Blue is a pasteurised cow’s milk blue cheese. When it comes to taste, it’s got a strong blue flavour, but one that isn’t overwhelming or overpowering. In the same way, it’s dense interior also showcases a soft, moist texture that provides a uniquely sweet, caramelly flavour ending in a vaguely salty and savoury finish.
Tasting Notes and Pairing Suggestions
Each pack includes one of each cheese, accompanying tasting notes and suggested wine and food pairings. If a promoted cheese is unavailable for some reason, we will replace it with another great cheese.
