SOFT - Le Dauphin Double Creme Petit, Fromagerie Guilloteau  | France
This rich and creamy cheese is so close to butter that it could almost be considered in that light. This cheese is best eaten close to, or after its Best Before Date to ensure its texture is smooth and runny unlike its firm and crumbly texture when young. Its delicate flavour can often be overpowered so don’t try and combine it with big flavours. Keep it simple, sourdough and champagne. Matching... done!

HARD - Comté, Marcel Petit  | France
This is a Gruyere style of cheese, hard but with a smooth, buttery texture. Every wheel is slightly different, but will show classic rich, nutty flavours with a touch of caramel/ brown butter sweetness. Its ability to melt means that it can be used in many dishes, from a classic fondue to the perfect toasted sandwich.

BLUE - Roquefort, Papillon | France  
The sweet and salty flavours surround the rich textures as you fall in love with wonder. This “Emblem” of French gastronomy is only rivalled by champagne. Not often do we get the chance in Australia to taste raw milk cheese. As Will Studd once said, “tasting a raw milk cheese is like discovering colour television for the first time after years of black and white”.

STINKY - Le Duc Vacherin, Perrin Family Dairy, Will Studd Selected | France
Although technically a French washed rind, this cheese bares no resemblance to the stench of the dirty feet of the gods. The smell is more earthy and forest-like while the flavour is more inline with a mild stinky. Quite often a washed rind is too much for the Australian heat, yet this one packs it perfectly for Summer as you wash this down with a cleansing ale or bubbles. Try our baked Le Duc recipe and you’ll be wanting this for dinner everyday. Best to eat this close to, or beyond, the Best Before Date.

Pont L'éveque, Le Conquerant | France 

The pungent aromas of this delicious washed rind cheese will assault you as you unwrap its wax paper coating – you may feel as though you are standing in a stable-yard! The rind itself has a classic deep golden colour and funky notes of hay and horses, as well as the rich buttery flavours and a touch of salt. The interior is soft and melt-in-the-mouth with a rich creaminess and hints of hazelnut. Leave out of the fridge for a couple of hours to best enjoy its creamy texture.
