Further Details...

Mention Paris and you probably immediately think of the Eiffel Tower, maybe the Moulin Rouge, a vibrant cityscape full of elegant women in haute couture. Yet a mere half an hour east of the city (or a good half day on a vintage bicycle), although still classified as metropolitan Paris, things take a distinct turn for the rural – think more berets than Balenciaga…

The inviting exterior of this Brie-style cheese is soft and white when young, but with additional ageing will become crusty and mottled with brown spots. The flavour is lightly earthy, with mushroomy, grassy notes that intensify with time. On the inside it is rich and creamy with an ivory colour contrasting beautifully with the rind. Leave out of the fridge for several hours to allow its generous paste to ooze.

The word Brie itself is not protected so to this day we still see producers around the world appropriating the name for cheeses that bear very little resemblance to classic French Brie. We hear that even the Chinese produce a “Brie” these days, although don’t expect to be ordering it through Cheese Therapy any time soon…

About Artisans Bend

Open tab

Artisans Bend is a marketplace solely created to support small artisan producers and showcase their produce across Australia. Although Artisans Bend was only launched in 2021, it evolved the the successful Cheese Therapy that set out in 2016 to support small cheesemakers. The passion for supporting small cheesemakers meant that the progression to Artisans Bend was inevitable in order to support a wider range of artisan producers and give Australians a central hub to find some of this country's most amazing products.

Artisans Bend now directly supports more than 250 producer, not just in promoting their products on the site, but also provides much education about sales, marketing and eCommerce to ensure that collectively, this industry rises together. As the saying goes, "all ships rise on the tide".

Blessed are the cheesemakers... and producers of other artisanal products.

Josephine Hanney (Sydney, AU)
Rich creamy cheese

Love the cheese. It is rich and creamy and delicious

David Ritchie (Geelong, AU)
Surprisingly ordinary

A bit disappointing after our previous brie cheeses from cheese therapy. Perhaps it was too under ripe, but had little of the luscious creaminess nor the flavour it should have. Don't expect a D’affinois! C’est la vie?

Françoise Muller Robbie (Elwood, AU)
Brie Français

Not bad...a bit over ripe.
