Traditionally brined using 10% salt, the fermenting of olives takes between 12-18 months. The delicate black olives retain a very slight bitter salty taste ( less bitter than the green). Perfect in a platter with cheese. Hand picked and brined on the farm. They are vacuum packed in extra virgin olive oil. They contain pips.
