Daikon Radish Kimchi - Known as Kkakdugi in Korea, this kimchi is made of bite size cubes of daikon radish. Sweet, sour and crunchy all at the same time. This one is a little different to the cabbage kimchi and is certainly a great addition to your ferments. Traditionally eaten with Ox tail soup, it can be added to any meal hot or cold, or eaten straight from the jar. Try adding it to your salad bowl or as a side with some crispy skin salmon. Also enjoyed on fresh steamed rice.
