“Cheddaring the Cheese” is a labour intensive process that is vital to making cheddar by removing much of the whey. The more whey that can be removed, the firmer the cheese will be. While cheddar is certainly not the easiest of cheeses to make, there's something special about a true aged cheddar and Maffra Cheese are a real Australian showcase of this! This cheese is Australia's answer to the English and we can't get enough!

Who is Maffra Cheese Co.?
In the heart of the lush dairying country of Gippsland, you will find Maffra Cheese Co., owned and run by the diminutive dynamo, Ferial Zekiman. Unlike the majority of Australian cheesemakers, Ferial decided to place her focus primarily on cheddar, often more a labour of love than a commercial business decision. Ferial has utilised her background in chemistry to create one of Australia’s most internationally recognised cheeses.
What are the cheeses*?
This pack includes four incredible cheddar cheeses, each naturally aged to the perfect texture.
HARD: Maffra Aged Cheddar
Milk | Vegetarian
This delicious cheese is matured between 12 and 18 months when it develops a distinctive smooth flavour, finishing off with slightly acidic and salty notes. The inside of the cheese is a rich yellow with a creamy yet firm texture. As it ages, the cheddar will become crumbly - just how we like it!

HARD: Maffra Wensleydale
Milk | Vegetarian
Made from a traditional Wensleydale recipe that can be traced back to the 11th century, Maffra have truly outdone themselves here. While still young in the world of hard cheeses, it has a crumbly texture that is moist. It's often a lemony flavour and has underlying creaminess on the palate - it’s a showstopper.

HARD: Red Leicester
Milk | Vegetarian
Red turns heads, right? Well this cheese sure does - it’s an international and national award winner! Maffra Red Leicester has a tight texture and smooth, buttery, mellow flavour. It takes its colour from annatto, a natural orange-red condiment (betacarotene) from the seeds of the South American Achiote tree. The red colour was traditionally used to signify the creamy milk that it was made from.

HARD: Wensleydale + Cranberry
Milk | Vegetarian
Made with the centuries-old recipe of Wensleydale, but with a small sprinkle of cranberries carefully mixed through for extra texture and sweet fruit flavours. This one is for the sweet tooth and is a perfect dessert cheese accompanied by dessert wine, of course - nothing else is needed!

Shipping
When will my order be shipped?
Buying on Artisans Bend means you are buying direct from our producers. Our producers are required to ship your order within 48hours with a reliable carrier. If our producer requires chilled shipping, we work with them to ensure your order turns up in great condition.
How much is shipping?
There is a flat rate shipping charge for each producer you buy from. Whether you buy one or ten products from a producer, it will be just one charge. If you buy from two producers, you will be charged shipping for each producer as they are shipping to you direct from them. If you order contains an item that needs to be shipped chilled, shipping will be $14.95. Otherwise, all other orders will be just $9.95.
Can I track my order?
Your order will have all the tracking info needed to ensure a successful delivery. We are constantly upgrading our capabilities to ensure you are happy and have any concerns about where your order is. For items being delivered in a refrigerated vehicle, we offer a higher level of tracking including same day notifications and estimated delivery times to ensure you know when your goodies are coming.
