Who is Tarago?
Settled in the Western Port catchment in Gippsland, Tarago River Cheese company uses the seasonal variations in the region to their advantage and continue to follow the time honoured tradition of farmhouse cheesemaking. So what does this mean for all the cheese-lovers out there? You get to discover a bountiful cheese harvest with multiplicity of flavours and textures! Cheese, they wheel-y (we had to) do make miracles!

BLUE: Gippsland Blue
So we had to share exactly how Tarago River Cheese explains the flavour of their famous Gippsland Blue. Listen to this. It’s deeply complex like a ‘difficult child’ demanding great care and attention to mature. Well sorry to the difficult children out there that had to read that, but can’t you relate? Too funny! This really is the goo-gar of blue cheeses.
STINKY: Jensen's Red
What an absolute art - like an abstract painter with a brush, this Jensen’s Red is a true skill to master and a creative outlet for our friends at Tarago River. Named after cheesemaker Laurie Jensen and influenced greatly by seasonal milk conditions, it’s nature's wild child. This is a tricky cheese to craft but when done right, oh my crackers and cheese, it’s a moment! This is one of those moments. How do they do it you ask? Well well, we can’t give all their secrets away, it’s cheese code. But between us, they wash the surface of the chalky curds with a light brine solution that encourages the brevi-bacterium linens and LAF yeasts added in the wash to run free like a wild mare in the Victorian wind. What happens next is really Mother Nature’s magic. When perfectly ripe, it oozes with creamy goodness and shows off a brilliant yellow soft mould rind. Grab your piece of paradise and grab a full bodied chardonnay, this is a moment to be savoured.
BLUE: Shadows of Blue
If cheesemakers had nightmares, Tarago’s Shadows of Blue would be the ultra scary kind because of the difficulty and skill it requires to be made. Oh but it sure is worth the holy dreams it brings to all the lucky mouths that devour it! It’s a delightfully delicious double cream blue and yes it’s a thing and yes it’s as mind-blowing as you expect it to be. This unique Australian cheese is soft and creamy with a placid P.Roqueforti mould which shares centre stage with several wildly delicious yeasts powering their way through the flavour profile. It requires absolute perfect cellaring to ensure a perfect texture and perfect flavour is achieved, and as usual Tarago have gone ahead and outdone themselves yet again.
SOFT: Gippsland Brie
Made to traditional fermentation processes with free-range, fresh milk, you’ll be delighted with a soothing, mellow flavour with a suggestion of nuttiness. The ripper the brie, the more that yummy nuttiness will push through like a delightful daisy on a summer's day!
